Cairo, Egypt to Istanbul is an approximately 5.5-hour flight. You can also do a combination of flight and bus; or drive. Prepare for a bit cooler weather when traveling from Cairo in May: high temperatures in Istanbul hover around 25°C and lows are around 15°C. On the 9th (Wed), wrap the sightseeing up by early afternoon so you can travel to Goreme.
